Traditional mother-in-law's eye recipe

The sweet eye of mother-in-law is one of the most popular gourmet sweets of all times and one of the most typical sweets in Brazil! Going back in time, more specifically in the beginning of the 19th century, the way women express themselves and integrate into social life was through the preparation of sweets, many of them based on eggs, due to the influence of the Portuguese pastry shop.

The traditional mother-in-law's eye recipe reflects this influence, as the original recipe is prepared with egg yolks and does not use condensed milk. In fact, the traditional mother-in-law's eye candy is prepared with only 4 ingredients: egg yolks, grated coconut, sugar and black plums. Ingredients for making traditional mother-in-law's eye:

 100 grams of fresh yolks

 ½ kilogram of fresh or dry grated coconut

 ½ kilogram of refined sugar

 20 dried black plums

Completion:

 grated coconut or refined sugar

How to make a traditional mother-in-law's eye:

In a pan, mix the egg yolks with the grated coconut and sugar. Keep stirring over low heat until it turns into a dough that drops from the bottom of the pan, similar to a coconut kiss. Turn off the heat and let cool.

Tip: To avoid the smell and taste of egg, pass the yolks through a sieve, in order to filter their skin.

Meanwhile, take the plums and open them lengthwise, without separating the parts. Remove the pit, if necessary, and set aside.

Remove portions of the egg and coconut jam prepared previously and shape into a muffin shape. Pour in sugar or grated coconut and stuff the plums with it.

Tip: Grease your hands with a little oil to prevent the candy from sticking to them. In some regions of Brazil it is tradition to take the sweet to brown in the mold after assembly.
